There is no legal definition of a natural sweetener in Europe. That is why erythritol and xylitol sit on shelves under a natural banner, although both are brewed in industrial fermenters from corn starch. Walk down the baking aisle and every packet says something reassuring. Plant based. Naturally sourced. From the leaf. Very little of that language is regulated.

A sweetener can be built in a steel tank from corn syrup and still call itself natural, because nobody has written a rule that says otherwise. Meanwhile the one that grew on a vine costs three times as much and says less on the front of the pack. This article sorts out which is which.

Natural means one thing in Brussels and another in Washington

Europe regulates the word for flavourings. A natural flavouring has to come from a plant, an animal or a microorganism, and it has to be obtained by a physical, enzymatic or microbial process. Sweeteners are different. Europe treats them as food additives and gives them E numbers.

Aspartame is E951. Erythritol is E968. Steviol glycosides are E960. The E number tells you the additive is approved. It tells you nothing about whether it grew. America is looser still, because the FDA has never defined natural for food at all.

You cannot read the word natural off a label and learn anything useful. You have to ask how the thing was made. That single question sorts the whole aisle.

The artificial sweeteners, and why people buy them

These are made in a laboratory and never pretend otherwise. People choose them for three good reasons. They are enormously sweet, so a pinch does the work of a spoonful. They cost very little. And most of them behave well in food.

Aspartame is roughly 200 times sweeter than sugar and has been in diet drinks since the 1980s.

The aspartame argument, in one paragraph

In July 2023 the World Health Organization published two verdicts on the same day. Its cancer agency classified aspartame as possibly carcinogenic to humans, citing limited evidence. Its expert committee on food additives reviewed the same material and left the safe daily intake unchanged at 40 mg per kilo of body weight. A 70 kg adult would need somewhere between nine and fourteen cans of diet drink a day to pass that limit. Two bodies, one dataset, two headlines.

Sucralose, acesulfame K and saccharin

Sucralose is about 600 times sweeter than sugar and is made by swapping three parts of a sugar molecule for chlorine. Some research suggests it may alter gut bacteria, though the studies are small and the findings are contested. Acesulfame potassium turns bitter on its own, so it is nearly always blended. Saccharin is the oldest of them, and its history is a useful warning: it carried a cancer label for twenty years until researchers worked out that the rat mechanism behind the scare does not apply to human biology. The label came off in 2000.

The natural ones that are made in a factory

This is the group that causes the confusion, because the marketing and the manufacturing point in opposite directions. All four below get sold as natural. Only one of them is made the way you would guess.

Fermented

Erythritol

You will read that it occurs in pears and grapes. It does, in traces far too small to harvest. What you buy is made by feeding starch sugar to a yeast in a tank. It is only 70% as sweet as sugar, so recipes use a lot of it, and that volume is where the bloating starts.

Hydrogenated

Xylitol

Made by hydrogenating a sugar taken from corn cobs or hardwood. It matches sugar for sweetness, which makes it easy to bake with. Dentists like it. It upsets stomachs in quantity, and it is seriously toxic to dogs.

Extracted

Steviol glycosides

The sweet compounds inside the stevia leaf, pulled out with water, filtered, purified and often run through ion exchange. Some newer versions skip the leaf and are produced by fermentation. Many people taste a bitter or liquorice finish.

Boiled

Monk fruit decoction

Fresh fruit crushed, steeped in water, strained, then the water boiled off. Nothing added and nothing isolated. It is the only one on this list your grandmother could have made, and the only one that stays recognisable as fruit.

What the research actually says

The erythritol story is the one to watch. A 2023 study in Nature Medicine linked higher blood erythritol with cardiovascular events, and found in the laboratory that it made platelets stickier. Later work reported similar effects after people drank it. That sounds damning until you read the rebuttals, and the rebuttals are serious: your body makes erythritol on its own from glucose, so a high blood level may be a signal of something else going wrong rather than a record of what you ate. Association is not proof, and this argument is live.

Monk fruit sits in a quieter place. Its sweetness comes from mogrosides, which your body does not break down for energy the way it handles sugar. Some studies suggest mogrosides may have antioxidant activity, but that work is early and not clinical, and nobody should treat monk fruit as medicine. What stands out is what is absent. After eight centuries of use, no significant side effects have been reported. That is not proof of perfect safety, and we will not claim it is. Compared with a safety file that keeps reopening, a long quiet record still counts for something.

How to choose one

Forget the front of the pack. Five questions will tell you more than any claim printed on it.

  1. Ask how it was made

    If the answer involves a fermenter or a synthesis step, you are buying a manufactured ingredient. That may be fine. Just do not pay a premium for the word natural on top of it.

  2. Ask how much you will use

    Sweeteners close to sugar in strength get used by the spoonful, and that is where digestive trouble begins. Concentrated ones get used by the drop.

  3. Ask what you will cook

    Aspartame collapses under heat. Erythritol and xylitol bake well because they bring bulk. Monk fruit powder bakes well for the same reason, and the liquid suits anything you stir rather than bake.

  4. Read the ingredients, not the claims

    A short ingredients list is worth more than any word on the front. If a sweetener is mostly a carrier with a trace of something sweet, the list will show it.

  5. Trust your own tongue

    Bitterness, cooling and aftertaste are personal. A sweetener half your household refuses to eat is not a bargain at any price.

One honest tip: no single sweetener wins every job. Most kitchens end up with two. What matters is knowing which one you are reaching for and why.
